Meghan Markle has shared her love for cooking on several occasions, and one of her go-to recipes is a simple, single-skillet spaghetti dish. This recipe is perfect for a quick, comforting meal and requires minimal cleanup. Here’s how you can make it:

Ingredients:

  • 8 oz spaghetti
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 cups fresh baby spinach
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Fresh basil leaves, for garnish

Instructions:

  1. Cook the Spaghetti:
  • In a large skillet, break the spaghetti in half and add enough water to cover the pasta by about an inch. Season the water with a pinch of salt.
  • Bring to a boil over medium-high heat, then reduce the heat to medium and cook the spaghetti, stirring occasionally, until it is al dente, about 8-10 minutes. Reserve about 1/2 cup of the pasta cooking water, then drain the spaghetti.
  1. Prepare the Sauce:
  • In the same skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes (if using) and cook until the garlic is fragrant and lightly golden, about 1-2 minutes.
  • Add the cherry tomatoes and cook, stirring occasionally, until they start to soften and release their juices, about 5 minutes.
  1. Combine and Finish:
  • Return the cooked spaghetti to the skillet with the tomatoes. Add the fresh spinach and toss everything together until the spinach is wilted.
  • If the mixture seems dry, add a splash of the reserved pasta cooking water to loosen it up.
  • Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  1. Serve:
  • Divide the spaghetti among serving plates. Garnish with fresh basil leaves and additional Parmesan cheese if desired.

Tips:

  • Protein Addition: For a heartier meal, you can add cooked chicken, shrimp, or even crumbled sausage to the dish.
  • Vegetable Variations: Feel free to swap out the spinach for other greens like kale or arugula, or add other vegetables like zucchini or mushrooms.
  • Cheese Options: If you prefer a different cheese, try using Pecorino Romano or even a bit of ricotta for a creamier texture.
